Stir Fry Chicken with Zucchini


Ingredients

200g chicken thigh filet, cut into strips
1 medium (6-inch long) zucchini
100g Chinese pea (chicharo)
100g carrot, sliced
1 medium red pepper
1 bulb native garlic, minced
1 onion, sliced
2 tbsp soy sauce
1 tbsp honey
2 tbsp olive oil; any cooking will do, too
1/2 cup chicken broth
black pepper, ground


How to make stir fry chicken with zucchini

1. In a pan, heat the oil and stir fry chicken until brown. Set aside.
2. In the same pan, sauté garlic and onion.
3. Add carrots, Chinese pea, red pepper and zucchini and stir fry for about 3 minutes.
4. Add chicken broth, soy sauce and honey.
5. Add the stir-fried chicken and mix.

That's it, stir fry chicken with zucchini is done. Serve with warm rice and enjoy.

As for me, I topped this on brown rice for my baon meal.
