Pesto Pasta with Tomatoes and Zucchini

Still on my uric acid diet, I had this pesto pasta with tomatoes and zucchini yesterday for my "baon" lunch meal; a healthy pasta dish that is very simple and easy to prepare. I had the tomatoes and zucchini mixture prepared the night before which took me around 5 minutes of prep time and around 8-10 minutes cook time. The pasta was prepared the morning after. If you want a freshly-made mixture in the morning, it's doable since you only need around 20 minutes to cook the pasta and the sauce; just prepare the ingredients the night before.

Ingredients

150g of fettuccini pasta, cooked per package instruction
200 zucchini, sliced or cubed
3 medium tomatoes, sliced
1 bulb garlic, minced
1/2 cup fresh basil leaves, chopped
2 tbsp pesto
1 tbsp parmesan cheese, adjust to your taste
3 tbsp olive oil

How to make Zucchini Pasta with Basil and Tomatoes

1. Prepare and cook the pasta per package instruction; while waiting for the pasta to cook, prepare the tomatoes and zucchini mixture.
2. In a pan, put and heat the olive oil.
3. Saute garlic, chopped basil leaves and tomatoes for about 2 minutes.
4. Add the pesto and parmesan cheese and toss/mix with the sauteed garlic and tomatoes.
5. Add zucchini and let it cook for about 3-5 minutes.
6. Prepare the pasta and tomatoes and zucchini mixture on a plate and serve. Or in my case, toss the pasta in the tomatoes zucchini mixture and put in a lunch box.

That's it, your pesto pasta with zucchini and tomatoes is ready for "baon" meal. Try and enjoy this healthy pasta dish. :)
