Chicken Pesto Pasta with Pepper and Zucchini

Ingredients

150g fettuccini
200g zucchini, sliced or cubed
1 red bell pepper, sliced
1 green bell pepper, sliced
2 tbsp pesto
1 bulb native garlic, minced
1/2 cup basil leaves, chopped
3 tbsp olive oil
1 tbsp parmesan cheese
100g chicken breast fillet

How to make Chicken Pesto Pasta with Pepper and Zucchini

1. Prepare and cook the fettuccini according to package instructions.
2.  In a pan, heat the olive oil and pan-fry the chicken breast until slightly brown then set aside.
3. In the same pan, sauté garlic and the red and green bell peppers.
4. Add in the pesto, zucchini and parmesan cheese and let it cook for about 3 minutes or until the peppers are soft.
5. Toss in basil leaves and the pasta. Serve with sliced pan-fried chicken as toppings.
