avocado shrimp salad in lemon-olive oil dressing |
Weekend before last, I saw a Facebook post of avocado shrimp salad recipe. I've seen the recipe several times before but I only found time to do it last weekend. I didn't exactly follow the recipe I've read because I used a different dressing, I also added grapes which is not part of the said recipe. It went well by the way so for sure, I'll do it again next time. I love avocado and shrimp anyway. Here's how it goes...
Ingredients:
200 grams romaine lettuce, washed and cut in half (or any other way)
200 grams shrimp, shelled
1/2 cup grapes, halves
1/2 cup cherry tomatoes, halves
1 avocado (around 300 grams)
1 tbsp lemon juice extract
salt and pepper to taste
2 tbsp olive oil
2 tbsp lemon juice extract
1 tbsp muscovado sugar
salt and pepper to taste
Preparation:
- In a bowl, whisk together lemon juice, pepper and salt then add in the shrimp and stir fry for about 3 minutes or until shrimps turn orange. Set aside.
- For the dressing - whisk together olive oil, lemon juice, muscovado sugar, salt and pepper.
- In another bowl, combine all the ingredients including the lemon-olive oil dressing and then gently toss.
Serving: Good for 2-3 persons.
